Lemon Curd and Clotted Cream Scones.





When Life Gives You Lemons, Make... Lemon Scones.


Well, this post has definitely been a long time coming. With a failed attempt at shortcake a couple of weeks ago, a six and a half hour trip back to Liverpool for University last weekend and four 7am starts to get up for University this week, it has now shockingly become eighteen days since my last post which, is pretty terrible and I do apologize for that but, I am now officially back with a scrumptious scone recipe as a way of; saying goodbye to my family and home in Cornwall for the next four months and celebrating another delicious lemon themed recipe.

Despite growing up in Cornwall and having the certainty that Cornish Cream Tea would be featured on every single cafe, restaurant or tea room menu, I actually very rarely make homemade scones and so thought it would be nice to give them a go. I found this classic scone recipe on the BBC Good Food website and I have got to say that the recipe is so simple and wonderful and the scones are utterly stunning and just how great scones should be; crumbly, soft and sweet and perfect to encase a luxurious zesty lemon curd and rich clotted cream filling. The scones shot up like towers in the oven and I honestly could not believe how ginormous they were when I opened the oven door, they looked just like they had been bought from a bakery which, is always a good thing and even better when they are so easy and quick to make as well.

I had also never tried lemon curd on scones before yesterday as I had always stuck to the traditional jam and cream scone filling but, I can now safely say that lemon curd is a delightful and refreshing addition to a scone and may even be more delicious on a scone than jam but, shhhh! I'm not sure if that is an acceptable thing to say in Cornwall and I don't want to get banned from going home!

Recipe
Makes 8 Scones
For the Scones-
350g self-raising flour
1/4 tsp. salt
1 tsp. baking powder
85g unsalted butter, cut into cubes
3 tbsp. caster sugar
175ml milk
1 tsp. vanilla extract
squeeze lemon juice
1 beaten egg to glaze
For the Lemon Curd-
Grated zest of 1 lemon
juice of 2 lemons
2 eggs, beaten
90g golden caster sugar
55g unsalted butter
Clotted cream

Method

1. Start by preparing the lemon curd. Sit a heatproof bowl over a pan of barely simmering water but, don't let the bowl touch the water. Then place the eggs, sugar, lemon zest and juice in the bowl and whisk together. Now add the butter piece by piece and cook for about 15 minutes, giving it a good whisk from time to time, until the curd has become smooth, glossy and thickened. Allow to cool. You can make this the day before for convenience if you like. Just cover with cling film and refrigerate if desired.

2. Next, prepare the scones. Pre-heat the oven to 220°C/fan 200°C/gas 7. Tip the flour into a large bowl with the baking powder and salt and mix. Add the butter and rub in with your fingers until the mix looks like fine crumbs. Stir in the sugar.

3. Put the milk into a jug and heat in the microwave for about 30 seconds until warm but, not hot. Add the vanilla and lemon juice to the milk, then set aside for a moment while you pop a baking sheet into the oven.

4. Make a well in the dry mix, then add the liquid and combine it quickly with a cutlery knife, it will seem pretty wet at first. Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour and fold the dough over 2-3 times until it is a little smoother. Pat into a round about 4cm deep. 

5. Take a 5cm round cutter and dip into some flour, plunge into the dough and repeat until you have about 4 round scones. By this point you will probably need to press what is left back into a round to cut out another 4 scones. Brush the tops with beaten egg, then carefully place onto the hot baking sheet. 

6. Bake for 10 minutes until risen and golden on top. Allow to cool, cut in half and smother with lemon curd and clotted cream.

Lemon and Pistachio Cake.






When Life Gives You Lemons, Make... Lemon Cake.

Today is of course the 1st of September and so unfortunately means that our summer, sunshine and days spent lazing on the beach are now over however, Google has assured me that Autumn does not officially begin until September 21st so, despite the fact that the view out of my window is one of grey clouds and rain and ignoring the fact that I am bundled up in a chunky, over-sized jumper and debating whether to put my electric blanket back on my bed, I will choose to believe that we do still indeed have a few weeks of summer remaining. As such, I thought why not celebrate our remaining few weeks of summer with a few particularly zesty and summery recipes because I know that when Autumn arrives in just a few weeks’ time, it will bring a whole lot of chilly, windy and rainy weather with it and zesty, refreshing summer recipes will be a thing of the past as we tuck into our hearty stews and puddings instead.

For me, nothing is more delightful, vibrant and zesty in the summer than lemons which, just so happen to make some of the most delightful and flavoursome baked goods as well. I have therefore decided to do something a little bit different on the blog for the next few weeks and have created the 'When Life Gives You Lemons, Make...' mini series to share some delicious lemon recipes with you, as I thought that having a theme on the blog for a few weeks would be something new and exciting. So, over the next few weeks I will be making; Lemon and Pistachio Cake, Zesty Lemon Tart and Lemon Curd and Clotted Cream Shortcake and so, hopefully there will be at least one lemon recipe to catch everyone's eye but, if you are a lemon lover like me then I hope you adore them all.

I decided to start with this moist, crumbly lemon and pistachio cake taken from Fay Ripley's, Fay Makes It Easy cookbook and added in my favourite homemade lemon curd. It is the perfect afternoon tea cake, or for me; ‘the whenever I feel like a slice of cake, cake’. Every glorious, soft, sweet bite melts in the mouth and bursts on the tongue with zesty, lemony flavour while, the velvety, tart, river of lemon curd running through the centre is just a heavenly, hidden treasure. Simple and scrumptious, that's what we like to hear. 

Recipe
For the lemon and pistachio cake-
125g shelled pistachios
150g unsalted butter, softened
150g golden caster sugar
150g self-raising flour
1/2 tsp. baking powder
50g ground almonds
2 large eggs
juice of 2 lemons
150g-175g lemon curd
For the lemon drizzle icing-
75g icing sugar
2 1/2 tbsp. lemon juice
For the lemon curd-
Grated zest of 1 lemon
juice of 2 lemons
2 eggs, beaten
90g golden caster sugar
55g unsalted butter

Method

1. Start by preparing the lemon curd.  Sit a heatproof bowl over a pan of barely simmering water, but don't let the bowl touch the water. Then place the eggs, sugar, lemon zest and juice in the bowl and whisk together. Now add the butter piece by piece and cook for about 15 minutes, giving it a good whisk from time to time, until the curd has become smooth, glossy and thickened. Allow to cool. You can make this the day before for convenience if you like so just cover with cling film and refrigerate if desired.

2. Next, pre-heat the oven to 180°C and grease and line a 20cm round spring form cake tin with greaseproof paper. Prepare the cake mixture. In a food processor grind 100g of the pistachios to crumbs. Tip into a mixing bowl or the bowl of a freestanding mixer. Add the softened butter, sugar, ground almonds and mix until smooth and combined. 

3. Pop in the eggs and mix again until combined. Add 2 1/2 tbsp. lemon juice and mix. Sieve the flour and baking powder into the mix and fold in gently.

4. Scrape half of the mixture into the cake tin and spread to fill the tin and meet the edges. Smooth the mixture out and then top with the lemon curd. Roughly spread the lemon curd over the top but not quite to the edge.

5. With the remainder of the mixture, drop dollops over the top of the lemon curd layer to cover it and gently spread the mixture to the edge of the cake tin, smoothing with the back of a spoon. 

6. Roughly chop the remaining 25g pistachios with a knife and scatter over the cake. Bake for about 45 minutes until brown. Remove from the oven and allow to cool completely in the tin.

7. For the icing just mix together the icing sugar and 1 1/2 tbsp. lemon juice, stirring into a paste. Drizzle over the top of the cake, creating a criss-cross pattern and leave for a couple of minutes to set before serving.

P.s. if you do happen to have any lemons remaining after baking this cake, then the whole 'When Life Gives You Lemons, Grab Some Vodka And Make Limoncello' sounds like a great idea too.

Asparagus, Courgette, Feta and Sesame Salad.




Hello again! It's been a while since my last post as I was really busy last week attending my Auntie's wedding which was absolutely stunning. My Auntie and I have really similar taste so naturally I absolutely adored everything about her wedding, from the gorgeous cake to the beautiful flowers and delicious three course meal complete with my favourite Heidi Pieminister pie and a delicious dessert trio of; lemon tart, chocolate brownie and raspberry meringue. Yum.



The venue was stunning, the Cham 69 cocktails were particularly delicious and I definitely could have helped myself to a few more of those. We danced along to 80s songs all night and even broke out the air guitar a fair few times to some rock classics which was pretty hilarious and more importantly my incredible cousins; Alfie and Hugo also looked completely adorable and handsome in their little blue suits as the page boys for the day too.



My Auntie's dress was absolutely gorgeous and I actually couldn't believe just how beautiful she looked and how amazing her dress was when I saw her. It was honestly breathtaking. I was also really lucky to be asked to be her bridesmaid which, was very exciting as I am really close to her and I felt really privileged to be part of her special day. 



It was honestly just an amazing day for an amazing couple and they really deserved it and I wish I could do it all over again. Weddings are incredible, people should definitely get married more often. 


I am back now though and on a mission to keep healthy and lose a few pounds so here I am sharing with you this yummy salad recipe so, that I can hopefully one day look lovely in my own wedding dress but, for now as a lonely, singleton I'll just take getting that nice bikini body and who knows, it might just help me bag that future husband of mine too.

This is a lovely, simple, light and refreshing salad and I really enjoyed it and hope you do to! The lemon zest and juice gave a delicious fresh and summery burst to a nice healthy and tasty salad which, will hopefully help towards trimming down the old waistline unlike the homemade banoffee tart I will be munching on later. Sorry! No one can munch on lettuce leaves all the time though, can they? Unless of course you add a nice crumbling of creamy feta, some juicy courgettes and a handful of delightful, crunchy spears of asparagus, then it's not so bad.

Recipe
3 tsp. sesame seeds
280g asparagus
100g peas
2 courgettes
2 tsp. sesame oil
rocket leaves
125g feta, crumbled
grated zest 1 lemon
juice 1/2 lemon
small handful of mint leaves, finely chopped

Method

1. Heat a small frying pan and add the sesame seeds. Cook, shaking the pan and making sure the seeds don’t burn. When they are fragrant and have turned a light teak colour, tip them onto a saucer.                                                                                                               

2. Steam the asparagus for 3-4 mins until almost done. Drop into a bowl of iced water to cool, then drain and wrap in a tea towel to dry really well. Cook the peas for 3 mins in the boiling water used to steam the asparagus, then drain and cool under a cold tap. Slice the courgettes on the diagonal, about 0.5cm thick.

3. Heat a griddle pan until very hot. Brush the asparagus and courgette slices with the oil, and cook in batches until nicely striped with dark brown. Cut the asparagus into 5cm lengths.

4. Mix the asparagus, courgettes, peas, rocket, half of the feta, mint, lemon juice and lemon zest. Grind over some black pepper and sprinkle with the sesame seeds and remainder of the crumbled feta before serving.

Spiced Roast Carrot, Puy Lentil and Feta Salad.



This recipe post comes with the news that I have just burned 626 calories zumba-ing on the Wii so, for someone reading my blog for the first time right now they might assume that I am actually a really healthy person which, of course unfortunately wouldn't be entirely true... okay so it's not really at all true but, we're not here to talk about the little bit of extra padding I carry around my waistline right now, are we? I do try my best to be relatively healthy but, I do love a good cupcake every now and then as I am sure you are all aware and there are also so many recipes out there that are just begging to be tried which, don't exactly go easy on the old calories. I have actually just finished writing out my shopping list for the next meal I am planning to make which is a peanut satay with coconut and pineapple rice and as you can imagine; several hefty dollops of peanut butter, a good glug of rich, creamy coconut milk and a rather generous portion of sweet, sugary caramelised pineapples doesn't exactly make for the healthiest of combinations but, it sure makes for a delicious one. Needless to say, I definitely can't say no to the calories all the time!

Not all great recipes have to make you pile on the pounds though, as this delicious salad recipe proves. This spiced roast carrot salad is fresh, vibrant and summery and has a delicious combination of flavours; from the lightly spiced and caramelised roast carrots to the creamy, crumbly feta and from the earthy puy lentils to the refreshing, tantalizing addition of the fresh mint and lemon juice. A bowl of this is just so much more gorgeous, exciting  and scrumptious than your average bowl of lettuce leaves and I really hope you love it too! Simple to make, quick to produce and extremely yummy; what more could you ask for? Food that doesn't expand the old waistline? Well, it's good for that too. There's no expansion here. Just enjoy!

Recipe
2 tbsp. olive oil                                                                   
1 tbsp. cumin powder and 1/2 tbsp. cumin seeds  
500g carrots, peeled, halved and cut into batons
1 tbsp. clear honey or maple syrup
250g pouch cooked Puy lentils (or canned, drained and rinsed) 
1 red onion, finely sliced 
½ lemon, juiced 
large handful mint leaves, roughly chopped 
100g lamb's lettuces 
100g feta cheese, crumbled


Method

1. Heat the oven to 200°C. In a shallow roasting tin, toss together half the oil, the cumin, carrots and some seasoning. Roast for 25 mins, turning halfway through cooking. Drizzle over the honey or maple syrup, stir and roast for 5-10 mins more.

2. Meanwhile, gently heat the lentils with the onion, lemon juice, remaining oil and some salt and pepper. Allow to cool slightly while the carrots finish cooking. 

3. Toss the dressed lentils with mint and lamb's lettuce. Lay warm spiced carrots on top and scatter with crumbled feta.

Summer Vegetable Pizza Pie.


I always find that whenever I do any baking, I tend to go straight to the internet to find new recipes to try even though I've got a huge stack of delicious cookbooks in my bedroom so, today I decided to make my first recipe out of my Higgidy Cookbook and I'm very glad I did as this pizza pie was lovely. It is very similar to a quiche so, perfect to serve alongside some salad in the summer or to even take as a yummy snack for a picnic. I literally fell in love with the croustade pastry, it is gorgeous and tastes like a rich, buttery cheese scone. Yum! The filling was also very tasty and quirky and tasted very fresh and summery with all of the summery vegetables and the addition of the lemon zest. 

I really loved this pizza pie and it was actually really easy to make too which is good as pastry dishes can often be quite faffy and require lots of skill and time to make them look neat. I love the rustic look of this pizza pie which, is perfect for me as I have always been pretty terrible at shaping pastry and haven't quite managed to make any gourmet looking quiches or pies in all my ten or so years of baking yet but, I didn't think this pizza pie looked too shabby. 

Has anyone else stumbled upon any delicious recipes recently in their mound of long forgotten about cookbooks? 

Recipe
For the Savoury Croustade Pastry:
200g plain flour, plus a little for dusting
A generous pinch of salt
75g unsalted butter, well chilled and cut into small cubes
50g mature Cheddar cheese, finely grated
1 medium egg, beaten
2-3 tbsp. ice-cold water
For the Filling:
A knob of butter
3 garlic cloves, roughly chopped
1 courgette, cut into discs and then halved or quartered to make small chunks
4 large spring onions, cut into 1.5cm slices on an angle
75g asparagus, chop each asparagus spear into three
250g full-fat cream cheese
1 medium egg
Zest of 1 lemon
2 tbsp. chopped fresh flat leaf parsley
Salt and freshly ground black pepper
For the Topping:
1 ball buffalo mozzarella, torn
A little beaten egg, for brushing and glazing
Finely grated zest 1/2 lemon

Method
1. Start by making the savoury croustade pastry. Sift the flour and salt into a large bowl, add the butter and rub in with your fingertips until the mixture resembles breadcrumbs. Add the grated cheddar and stir until the cheese is just mixed in. Add the beaten egg and a few splashes of ice cold water and mix just enough to bring the pastry together. Turn out onto a lightly floured work surface and knead lightly until smooth. Try not to handle too much or the fat will get warm and the pastry may turn out tough and chewy. Wrap in clingfilm and chill for 30-60 minutes before use.

2. Now prepare the pizza pie filling. Melt the butter in a large frying pan. When it's sizzling throw in the garlic, courgettes and asparagus and fry over a high heat for 2 minutes. Add the spring onions and fry for a further 4 minutes or until the veg is beginning to steam but, hasn't lost it's vibrant colour. Now set aside to cool.

3. Beat the egg in a medium bowl and then beat in the cream cheese until fully incorporated. Season with black pepper. Add two-thirds of the cooled vegetables, the lemon zest and chopped parsley and stir to combine. Preheat the oven to 200°C

4. On a lightly floured surface, roll out the pastry into a 30cm circle about 3mm thick. Transfer to a large baking sheet (the pastry may hang over the sides). Spoon the creamy mixture onto the pastry, leaving a border of about 5cm all the way round the edge. Sprinkle over a third of the torn mozzarella and a good grating of black pepper and a pinch of salt. Top with the remaining vegetables and mozzarella and turn up the excess pastry around the edges of the filling.

5. Brush any exposed pastry with beaten egg and bake for about 25 minutes or until the pastry is golden and crisp. Finally, remove from the oven and allow to sit for 5-10 minutes before slicing into wedges and serving.

Blueberry Crumble Cupcakes.



Hello again! Yes I know, yet another cupcake recipe for you. I promise I do do other things and don't just sit in my kitchen baking cupcakes all day, not everyday anyway. I do occasionally make other types of food too I swear, in fact I am actually making some homemade nachos, guacamole and salsa tomorrow. Yum. Does anyone else adore nachos? 

I really wanted to sell my cupcakes at farmers markets this summer to see if anybody would like and buy them but, I haven't had much luck with hearing any good news back from farmers markets yet so I don't think it looks likely now. As I mentioned in my blog post the other day, I'd really like to start up my own little baking business after University and to run a food truck so that I can travel around Cornwall selling my food. I thought that selling my cakes at farmers markets would be a good place to start just to see if people would actually like my food but, never mind. I'll just keep practicing my recipes for now and then hopefully one day CeeJay's Cupcake Cafe will be trundling along from beach to beach in Cornwall serving up ice cream and cakes. Who knows ay? Fingers crossed.  

Anyway, on to the cupcake recipe.

Recipe


For the Blueberry Cupcakes-

300g plain flour
155g caster sugar
1 tbsp. baking powder
½ tsp. bicarbonate of soda
¼ tsp. salt
250ml whole milk
2 large eggs
1 tsp. vanilla essence
85g unsalted butter, melted
50g fresh or frozen blueberries, plus extra for decorating
50g fresh or frozen raspberries
For the Crumble Topping-
50g plain flour
40g unsalted butter
30g soft light brown sugar
40g pecans, chopped
1 tsp. cinnamon
For the Blueberry Sauce-
70g blueberries
20ml water
60ml orange or lemon juice
40g caster sugar
20ml cold water
10g corn flour
1 tsp. almond extract
1 tsp. cinnamon
For the Lemon Curd Frosting-
250g icing sugar
80g butter
50g lemon curd

Method


1. First, prepare the crumble topping. In a bowl, rub the flour and butter together with your fingertips until the mixture resembles breadcrumbs. Stir in the remaining ingredients and place enough (perhaps 1 tbsp.) of the crumble topping into a tray and bake in the oven for about ten minutes until golden and crunchy, ready to scatter on the tops of the cupcakes. Set the rest aside for later.
2. Next, prepare the cupcakes. Pre-heat the oven to 190°C and line a cupcake tin with 12 muffin cases. Sift together the flour, baking powder, bicarbonate of soda, caster sugar and salt and place in a large bowl. Pour the milk into a jug, add the eggs and vanilla essence and mix together by hand.
3. Make a well in the centre of the dry ingredients and mixing slowly, pour in the egg and milk mixture. Scrape down the sides of the bowl to catch every bit of the mixture, increase the speed to medium and continue beating until smooth. Then pour the melted butter in and beat again to incorporate.
4. Stir in the berries by hand, making sure they are evenly spread throughout the mixture, then spoon the batter into the muffin cases, filling each up to two-thirds full and sprinkle with the remaining crumble topping.
5. Bake in the oven for 20-25 minutes until the cupcakes are bronzed and bounce back when lightly pressed. Transfer to a wire rack to cool.
6. While the cupcakes are cooling, prepare the blueberry sauce. In a saucepan over medium heat combine the blueberries, water, orange or lemon juice and sugar. Stir gently and bring to the boil.
7. In a cup, mix together the corn flour and cold water. Gently stir the corn flour mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, about 3-4 minutes.Remove from the heat and stir in the almond extract and cinnamon. Allow to cool slightly.
8. Cut a hole out of the centre of each cupcake and fill with 1-2 tsp. blueberry sauce. 
9. Next, prepare the lemon frosting. Beat together the butter, icing sugar and lemon curd until fluffy, light and smooth and pipe onto the cupcakes using your favorite piping bag and nozzle. Finally, scatter the top of each cupcake with some of the crunchy crumble you prepared earlier and finish with a plump, juicy blueberry.    

Note. instead of using the lemon frosting on these cupcakes you can also top them with whipped double cream and they are delicious, like mini gateau's! Just whip up 600ml double cream and dollop away! 


I also forgot to say the other day but, McBusted were incredible! Oh I do love a good boyband. It was just so much fun and such a great show and all of the guys looked like they were having a great time which, was really lovely to see. They were all hilarious and Danny and Dougie were looking particularly gorgeous too which, was rather nice. Since finding out James spends some of his time living in Padstow I also seem to have become quite attracted to him which, gives me even more reason to trundle to Padstow selling my cakes all in the hope that James will one day fall in love with me and my cooking. It was fun to be able to dance and sing along to every song and at the end of the night I just wanted them to do it all over again. It was honestly one of the best concerts I've ever been to! I definitely need to start going to more concerts, it's always such an amazing atmosphere and really incredible and overwhelming when you see a band you really like.

Lemon Curd Cupcakes.



Hello! Long time no speak. I have now officially finished my exams and also my first year of University which, literally just flew by and I can't actually believe it's already over! I am so happy to be home now though and can't wait to spend my summer at home in Cornwall with my family. As lovely as Liverpool is, Cornwall is home and there is no place I'd rather be, especially in the summer when you can spend your days lying on the beach and munching on clotted cream and jam scones! Lovely.

I don't think there is anything more summery, refreshing and delicious than a lemon cake and last weekend I decided to embrace the gorgeous weather we were having and bake some yummy, zesty lemon cupcakes. I really love this recipe; the lemon and poppy seed cupcakes are so moist and soft, the lemon curd is zesty and delicious (thanks very much Delia!) and this lemon curd frosting, oh this lemon curd frosting is so sweet and velvety. Recipe
For the Lemon and Poppy seed Cupcakes:
225g self-raising flour
175g golden caster sugar
zest of 2 lemons
1 tbsp. poppy seeds
3 eggs
100g natural yoghurt
175g unsalted butter,melted and cooled a little
For the Lemon Curd:
Grated zest of 1 lemon
Juice of 2 lemons
2 eggs
90g golden caster sugar
55g butter
For the Lemon Curd Frosting:
250g icing sugar
80g butter
50g lemon curd
To decorate- Crushed lemon sherbet sweets, grind in a food processor or crush with a rolling pin

Method

  1. Heat oven to 180°C/ 160°C fan and line a 12-hole muffin tin with muffin cases. 
  2. Mix the flour, sugar, lemon zest and poppy seeds together in a large mixing bowl. Beat the eggs into the yogurt, then tip this into the dry ingredients with the melted butter. Mix together with a wooden spoon or whisk until lump-free, then divide mixture between the cases. 
  3. Bake the cupcakes for 20-22 mins until a skewer poked in comes out clean or the surface springs back when lightly pressed – the cakes will be quite pale on top still. Cool for 5 mins in the tin, then carefully lift onto a wire rack to finish cooling.
  4. Next, prepare the lemon curd. Sit a heatproof bowl over a pan of barely simmering water, but don't let the bowl touch the water. Then place the eggs, sugar, lemon zest and juice in the bowl and whisk together. Now add the butter piece by piece and cook for about 15 minutes, giving it a good whisk from time to time, until the curd has become smooth, glossy and thickened. Allow to cool.
  5. Once the cupcakes are cool use an apple corer to cut out a dip in the centre of each cupcake and once the lemon curd is cool fill each dip/hole with 1-2 tsp. lemon curd.
  6. Finally, prepare the lemon curd frosting. Beat together the butter, icing sugar and 50g of your homemade lemon curd until the frosting is light and fluffy, about 5 minutes. Then pipe a swirl of the frosting onto each cupcake and scatter with the pieces of crushed lemon sherbet sweets.

This time next week I'll be queuing up to see McBusted so I can't wait to revert back to my 10 year old self again as I sing and dance along to Year 3000 and Air Hostess. As much as I pride myself on loving rock music, I do love a good boyband and I always will! McFly and Busted are two of my favorites as well so I can't wait to see them, I think it will be a lot of fun and McFly are also singing Shine A Light which, I'm really happy about as it's one of my favourite songs. Dougie Poynter also happens to be one of the most beautiful men alive so, he'll also be pretty wonderful to look at, Ellie Goulding you lucky girl!
